Easy Dinner Rolls

1 Cup of warm water
2 packages of active yeast or 5 tsp if you use bulk yeast
1/2 cup of butter softened
1/2 cup of sugar
3 eggs
1 tsp of salt
4 1/4 cups of flour
Do not preheat oven yet, these need time in the fridge!

Add the yeast to the warm water
 measure out your sugar
sprinkle a little bit of the sugar in the water
give the mixture a little stir and set aside
When it is ready it will be all foamy like this
Put in the mixer bowl, or a big mixing bowl if you are doing it by hand
Melted butter, add to the bowl with the yeast mixture
Add the sugar
Add your eggs one at a time mixing well between them since I have been known to drop the whole thing in the bowl I stop the mixing to add each egg
 Add the salt
Give it all a little stir.
Now start adding the flour a little at a time, not all at once.
It will look like this a little sticky
put it on a floured surface an knead a little until it is a nice little ball and not so sticky
Let the monkey add a little flour to the surface... important step!
Now put the dough in a covered dish and put in the fridge. You can use this dough from 2 hours to 3 days

Make has many rolls as you want and let them rise until they are doubled in size. Then bake about 17 minutes at 375 degrees

 YUM!

Add a pat of butter or my favorite... dip in honey. Enjoy!
